Anyone else feel we are getting to many characters to early? Looks like we've got nearly all the main characters already and the games only been out a few months.

Not at all, I'm actually surprised Stewie took so long. He's probably the most popular character and thus would be the biggest attraction. There's still dozens of characters left, and hundreds of possible skins.

Given that there hundreds more Simpsons characters, I'd argue that Tapped Out has just about all of the main ones. Just some popular and lesser characters (or even deceased) ones left.
Family Guy also has a range of many characters. I know they have added most of the core characters (has a smaller core set) - but I think there are still numerous others can be added. Obviously some lesser, but somewhat important characters (Babs, Peter's Dad, Cleveland's family, Lois's brother/sister), also others that currently in the character menu, Gertrude (Stewie's rival), Giant Chicken, Chris's teacher (Miss Locke?), Diane Simmons, Paulie, Pawtucket Patriot owner, plenty of 1-timers or few timers left to add. Obviously the list isn't as long as the Simpsons, but there's still many characters go to.

We can't forget that Family Guy only has been on exactly half as long as the Simpsons plus family guy will be adding characters that haven't been on the show like King Butt and the winner of the sweepstakes

I'm not a huge Maggie fan, but I know there's dozens of tasks they could use for her providing they don't make her a taskless character. But I'd also argue that Stewie is like The Simpsons' Bart. Stewie is much more iconic than Maggie, despite her having lots of good moments in the show.
